Grow primarily in soil. Beet seeds have a strange shape, which is part of the reason it is hard to grow hydroponically—because it requires a lot of consistent moisture and darkness, making soil the ideal growth medium. Their root systems also require a bit more room to explore and grab hold.
Moisten your soil or potting mix and pour it into your tray and tamping it down. After presoak, plant your seeds by spreading them evenly across the soil and then cover with a thin layer of soil. This provides the ideal conditions for the seeds to germinate. The seeds will germinate beneath the soil and begin poking through the top layer. This will help de-shell the Beet seed shell that might still be attached to the growing Beet microgreen. Keep covered until you see Beets poking through then remove cover. Place in a place of adequate sunlight or under a grow light.
